FYI, i have succesfully installed Microsoft Hyper-V Server 2016 on a APU2. I have done the installation on a VM in Linux, and then dd the RAW disk drive to the APU2 SSD and it booted. On the VM I activated serial console, and installed Windows Admin Center (also Free) to have a web interface to manage this server.
For serial Serial console, Windows EMS just need to be activated :
bcdedit /emssettings bios bcdedit /ems on bcdedit /emssettings EMSPORT:1 EMSBAUDRATE:115200

This make a good alternative (and free) to VMWare and performance with windows is good.
